BeesOnline Manuka Honey and Macadamia crusted Lamb Rack
Roast Lamb is a favourite on our New Zealand Dinner Menus. This recipe is excellent for entertaining because it can be prepared in advance, then finished for an impressive and flavoursome meal.
2 x (6 cutlet) trimmed Lamb Racks,
½ cup finely chopped Macadamia nuts,
I clove of Garlic crushed then finely chopped,
1 tablespoon finely chopped fresh Rosemary, Mint or Thyme, (or a mix)
1 Red chilli, finely chopped,
Zest of half a lemon,
Freshly ground salt and pepper,
1 -2 tablespoons BeesOnline organic Manuka Honey to bind,
Sear Lamb Rack. Cool . Mix all crust ingredients, bind together with the Manuka honey to a stiff paste. Spread over the meat side of the rack.. When ready, finish cooking meat in a moderate oven (180 degrees) until golden and cooked to taste.
We usually serve this meat with a meat Jus flavoured with reduced Honeygar, a product we manufacture using naturally fermented Red Wine Vinegar and Manuka Honey.
Today it has been served on a Grated Kumara, Horopito and Crispy Bacon Rosti , with sautéed purple micro Kale.
