BeesOnline Rata Honey Pannacotta

A deliciously simple dessert that can be prepared in advance and served with Fresh Fruit in season. We always use organic milk and cream at our Café.

1 3/4 cups fresh Cream,
¼ cup Full Cream Milk,
3 leaves of Gelatin,
1 Vanilla Bean. Split pod and scrap out seeds,
1/3 x 250gm jar of BeesOnline Organic Rata Honey, more if a sweeter pannacotta preferred.

Presoak gelatin leaves in cold water. Bring cream, milk, vanilla and honey to a slow boil. Immediately remove from heat. Squeeze gelatin leaves to remove excess water then add to the hot cream mix. Stir well and cool. Skim top of mixture then pour in to moulds. Refrigerate until set.

Place mould on plate and serve with fresh fruit in season, honey sweetened whipped cream, fruit coulis, honey syrup or mousse as desired.

Yield 4-6 servings depending on size of mould.
