Brendon our Head Chef, loves autumn and all the wonderful local produce. We are serving these wonderful organic South Head figs as a brunch special. The rich rewarewa honey lends a luscious quality to this dish.
2 x fresh figs, sliced in half
50g Supreme Champion* Goat’s cheese, cut in four slices
40g butter
2 tablespoons BeesOnline Rewarewa honey
4 x small crostini (or slice wholemeal toast cut in four)
1 x small ramekin natural yoghurt
1 x rasher bacon
Salt and pepper to taste
1. Grill bacon on slow heat until crisp then set aside. Once cool, cut into four.
2. Place figs on a baking tray and top each with 1 slice of goat’s cheese, knob of butter, ¼ teaspoon rewarewa honey, 1 piece of bacon, and bake at 160°C for approximately 10 minutes.
3. Place baked figs on crostini and drizzle syrup from tray over them.
4. Serve with a little Natural Yoghurt on the side.
