Mint and Honey Vinaigrette

- Half Cup good Olive Oil,
- Half Cup White Wine Vinegar,
- 2 heaped teaspoons mild honey e.g. Clover Blend,
- Juice of half a lemon,
- 1 clove garlic, crushed in quarter teaspoon salt,
- Pepper, freshly ground,
- Mint Leaves freshly harvested
Blend , whisk and shake all together. Just before serving add freshly chopped or torn Mint leaves to taste.
